I'll admit anyone's better than Koji Kondo when I get the Mario Bros theme unstuck from my head, haha.
Marty O'Donnell's pretty good, too, though. But why is the Halo 3 trailer music better than any of the music that made it into Halo 3 :/

yeah, he's a demon on the piano, but Brad, just buy the Halo 3 soundtrack, and you'll realize how

I'm a big fan of Nobuo Uematsu myself. I know, people will boo him for FF series blah blah blah, but his music works so well for the games. I also how he uses themes for the character, much like Wagner, except it doesn't take 23 hours to perform. The music works well as background AND as a stand alone, which is unique for game music. The fact that his LA concert sold out in 3 days is outstanding.
I also like Garry Schyman's work in Bioshock. Just the complexity of the music is amazing, as well as it being so emotional.
The other really outstanding composer would be the guy/group/people who did the Homeworld soundtrack. I just love the ambiance, as well as the use of Eastern style music mixed with a highly technological game. The use of Barber's Adagio for string's and Yes as the end credits really make the game's music special.
